Sesame seed rolls and wreath..made them for dinner the other day . They look exotic , and the sesame adds a nice nutty crunch to it. Easy to make . Perfect addition to your dinner menus or a party. This is umpteenth recipe with yeast. I love to try out different rolls recipes ! 




Same dough tried the stuffed wreath and the  rolls. 
  


Recipe.and method go hand in hand. Please read carefully. You could half this recipe. Since the all purpose flour used is 5 cups and the yeast is 3 and 3/4 th tablespoon. 



Ingredients

1 cup of warm water
Dry yeast  3 and 3/4 tablespoons
1/4 tsp sugar 


Mix all the three ingredients and keep it aside to proof for 5 mts or so! 


  
The yeast is ready. Nice frothy ! 
I have used a food processor, u can do this by hand. 
Add 2/3 rd cup of milk, 
1/4 th cup of oil 
1 egg 
1/3 rd cup sugar 
1 tbsp sesame seeds
Pinch of salt . 
Mix all these ingredients for 30 seconds. 
Add 1 cup flour. Mix for 1 mt.scrape the sides.
Now add 4 cups of flour . Maida.
And 3 tbsp of chilled butter.
Now dont use mixer, mix it with a ladel well and then use the mixer for 2 mts.
Turn this sticky dough into an oiled big container. Cover with wet towel and keep away till double in size. 
Remove and punch out the air, use dry flour to handle as this is a very sticky dough. 
Divide into four, cut it with a metal scraper. As shown in my previous recipes. 
Sprinkle dry flour over the countertop, and roll out one piece .as shown in the picture .
Cut 2 inches strips ….total 6 strips. 
Stack them to form 6 layer. 
Cut into 2 inches squares.
Grease muffin tin, and place them cut side on top.
Brush with milk of egg wash and sprinkle with sesame seeds.let it double in size , so keep it in the oven again for 20 mts. 
Bake at 350 F . Till golden brown. 
The dough ready .
It will be loose and sticky, i have used extra flour to make it manageable to handle .

Cover and keep with a wet cloth, i usually put it in a switched of oven. 






This is how it looks after 50 mts. Fully risen. 

 
Punched out the air. No kneading please. 
 
Metal scraper to cut it into halves. 
  
Roll it into a rectangular shape. 
 
 
This is how u stack it . 

Put into muffin cups . Egg wash. 





  
Sprinkle sesame. Let it stay in the switched off oven for 20 mts to rise further. 
  
Bake at 350 F. Till golden brown. 
  
Wreath…
   
Same way , rolled it into a rectangle, filled it up , rolled it and put it in a round ring mould. 
Filling was sauteed pepper, red and yellow with rosemary and thyme. And salt pepper. 
  
 

  
U can make the 6 folds and cut them and put them close side by side, like i have done for half, and half is just one roll.

Follow same method . Let it rise again and then bake .
