Porcupine Chicken….saw it on TV …looked easy and i had just shopped some fresh chicken , so used 250 gms for Salamis and 250 gms for this nice looking dish ! Both are steamed and so made it for dinner. It was a pleasant looking flowery kind of chicken ball. 

Porcupine Chicken …

250 gms chicken mince …i buy boneless chicken and mince it in my Food Processor. 
1 teaspoon of finely chopped ginger
1 teaspoon of finely chopped garlic
3 tbsp of chopped carrots
3 tbsp of chopped spring onions
1 tbsp soy sauce
1 tbsp Oyester sauce
1 tsp sesame or anyother oil
Pepper powder and salt as per taste
1 egg
1/2 cup rice ..washed and soaked for 2 hrs.  Strain and keep. 
Bamboo steamer ..or iddli steamer ..
wash soak rice for 2 hrs. I have used basmati rice. 
Remove water , and keep it aside.
Add everything to the mince …but the rice . Rice it for outer coating . 
Mix it well and form into even shaped balls, wet your hands slightly in case u want to make uniforn rolls . 
Now roll these balls into the rice kept aside, nicely ..coating all around. 
Cut a piece of foil same size as the steamer …or lightly oil the mould if using iddli steamer. 
Place the balls into it . 
Heat water in a Kadai …about 2 glasses, once it comes to a boil , place the steamer and cook for 15 mts..with the lid on . 
Check and you will see the porcupines case rice is uncooked steam it lil more . 
Remove and serve hot. Enjoy with sweet chilli sauce or Schezwan sauce.

The mince and rest of the ingredients …veg, oil , egg , sauces and spices 

The rice coated balls placed on a oiled foil …in the steamer. 
I threw in the left over rice too…not wasting it . 

The Bamboo steamer placed in boiling water in a Kadhai ! 

Steam for 15 mts ….and they are ready ! Pretty sight ! 

Garnished with chopped spring onion greens…
