Pita bread ..home made . Pita is a soft, slightly leavened flat bread baked , and popular in mediterranian and Middle Eastern Cuisine ! It is served at just about every meal in Middle east. It trade mark Pocket is created by steam when the Pita is baked in hot oven . Which puffs up the dough but flattens as the bread cools down , and a pocket is still left in the middle ! So when u cut it into half, the pocket is what u fill up with different veg or non veg kebabs and fillings . Along with the famous Hummus and Tahini and sweet pickled vegetables . I improvise it to make Shawarma at home ! And we love it ! 







Pita bread, hummus, pickled vegetables , Falafels , mint leaves and extra lemon to squeeze ! Tahini has been mixed with the Hummus . 



   
Recipe 
Ingredients 
3 cups wheat flour or Atta . I have used half Atta and half Maida. 
Salt 1/2 teaspoon
1 and 1/4 cup warm water
1 tbsp dry yeast 
1 teasp sugar
1 tbsp olive oil 

Method 


Take 1/2 cup warm water, add sugar, stir it , add yeast, give a stir . 
Cover and keep till it froths. 
Take a big bowl, add the flour , salt , olive oil and ready yeast, add rest of the warm water to make a soft dough .  Add little extra flour if required. 
Knead it well for 5 mts. 
 
Oil the bowl and put the dough in it . Cover with a wet cloth. 
Let it double in size . It will take about 1 to 2 hrs depending upon the weather. 

Once doubled..take out, punch and deflate the air . Make medium sized balls . 
Cover and again leave for 15 mts. 
Dust the working area and roll out like thick chapatis. 
Preheat oven…micro or normal …250 c  and put them in the tray and bake till it fluffs up it should have a light golden brown color. 


Remove and store . It can be kept for a few days in the fridge, used again . 
Cur into four, bake further 10 mts and use it with your dips. Makes a tasty snack !

I have sprinkled some mint and coriander chopped. And mixed it again . Like to add my touch to recipes. Its not a must . 
 
 Made small balls and again left for 15 mts to rise further. 

After 15 mts u can see they have risen further. Ready to be rolled and baked.

You can do it on the tawa like u do for a chapati ! Put pressure with a cloth or flat spatula to fluff it up ! Cook on both sides. 


You cut it into half as shown in the picture , fill up the pocket with your choice of filling adding Hummus  and Tahini and fresh or pickled salad !

How to make Hummus..

1 cup boiled Kabuli chana . Drain . But keep the water aside . 
2 teasp lime juice
1/2 cup olive oil or more 
1/2 teasp garlic paste 
Salt 
Pepper 1/4 tsp . 



Method..in a mixer , add the boiled chana and grind them to a fine paste, add olive oil. Make a smooth paste. In case its not smooth and still hard , add little chana water into it to make a smooth paste ! Mix well in the mixie ! 
Add the rest of the ingredients, mix it well . Taste and add anything u want to increase like the garlic or salt or lime juice . There should be enough olive oil to make a smooth paste ! 

Put it in a bowl, drizzle generously with olive oil. 
Serve along with olives and mint leaves.

Tahini paste or dip

1/2 cup til or sesame seed
1 tbsp lime juice 
Olive oil enough to make a smooth paste 
1 crushed garlic ..clove only . 
Chopped parsely opt for garnish. 


Add in a blender and make a smooth paste.

Mixed Arabic Pickle

Icup of mixed vegetable ..like carrot , cucumber, onion, cauliflower florets. 
Clean and chop carrots into sticks, cucumber with skin into fingers , onion into 8 pieces
 
Take two cups of water, add 1/2 cup vinegar, 1 teasp salt, 1 tbsp sugar and 3 flakes of crushed garlic.  Put this on fire, bring to a boil. Add all the vegetables. One boil. Remove from fire. Add a teasp of olive oil . Do Not Drain !  Its ready . 
Cool it and refrigerate in a container. 
Stays for a month.
