Pancake…is a flat and round cake, prepared from milk and flour. Its a popular breakfast recipe. Nothing like easy homemade pancakes for  a weekend breakfast. Can be had plain, or accompanied with fruits , honey or maple syrup. They are worth a try and just melt in your mouth. You will end up eating a few yourself while making them, i did ! 









I made Cherry  pancakes, by adding color and chopped cherries. 





   
Recipe..🍥
Ingredients..
Milk..1 cup , add 2 tbsp of white vinegar to curdle it
Egg..1 instead use 1 tbsp fresh curd or omit.
APF ..1 cup , Maida.
Oil ..2 tsp or melted butter
Soda bi carb..1/2 teasp
Salt..1/4 teasp
Vanilla essence..1 teasp
Food color a few drops
Chopped fruit opt.

Method…
Beat egg, curdled milk, oil and essence with a whisk. 
Mix all dry ingredients..maida, baking soda, salt in a bowl. 
Make a well in the center and pour the liquids into it, mixing it simultaneously. 
It should be a smooth batter, thick but pourable . 
Add color and chopped fruit if u want to add at this stage. Mix lightly. 
Leave it for 10 mts. 
Heat a non stick pan. Use lil oil or butter to lightly grease it. 
Heat it well, then put it on slow flame. 
Mix , and pour a ladelfull of the batter and it should spread into a thick circle. 
Cook on sim, till bubbles start appearing and the edges turn little dry. 
Flip it , it should be golden brown. Test one . If too thick, add little water. Mix and try again. 
It is usually cooked on one side only. So turn only once. 
Stack them on top of each other. 
Serve hot …with a dollop of cream, or honey or maple syrup. 
And a generous sprinkle of cinnamon pwd.

Plain one with chopped mangoes and Bananas and honey drizzled . 
   
Tips..
U can use wheat flour . 
Or use half and half of wheat flour and Maida. 
Add little water if thick. 
Beat well. 
Let it rest for 10 mts or so . 
 U can use stewed fruits, fruit coulis , or fresh fruit of your choice. 

One more vegetarian pancake recipe..
1 cup Atta
1 cup warm milk
1/2 teasp cinnamon
1 tbsp baking pwd
2 teasp honey 
1 tbsp oil
1 tsp vanilla essence
1/2 tsp salt
Water 2-3 tbsp 
 2 tbsp Melted butter. 
Mix all dry ingred. 
Mix all wet ingredients except butter. 
Make a well in dry, add wet ingredients, whisk well.
Set aside for 10 mts. 
Add melted butter. Whisk. 
Add water if required . 
Heat skillet ,  pour the batter one ladel full , and cook till bubbles appear.
