Coconut Panna Cotta with lime and ginger syrup …saw this dessert being made n TV . I added my twist by making candied lime circles and garnishing it with them ! Its a wow dessert ! A very elegant and stylish dessert i must say!
Coconut panna cotta with lime and ginger syrup and candied lime ..
1 tbsp castor sugar
400 ml Amul cream..2 tetra packs
400 ml of coconut milk ..1 tin
1 vanilla pod slit lengthwise
1 tbsp Gelatin
For Lime and Ginger syrup….
1 thumb size piece of ginger , thinly sliced
1/4 th cup of lime juice
1/4 cup honey or sugar or more to taste
1/4 th cup water.
Mix everything and cook at low heat till it a thick syrup. Cool and keep in fridge .
Strain it if u want to …i did not do so !
The ready syrup..
Method for the Panna cotta..
Soak gelatin in 1/4 th cup of cold water . Mix it with a spoon and let it bloom or until it softens.
Place the sugar , cream and coconut milkalong with the vanilla pod in a sauce pan .
Put it over low heat , stir until the sugar dissolves…2-3 mts
Bring to a simmer and remove from heat at once . Do not over cook or boil .
Remove the vanilla pod.
Add gelatin to the cooked mixture , mix well till it dissolves.
Oil the dessert bowls lightly and pour the mixture in it.
Chill in freezer till set. Remove and keep in the fridge . After 3-4 hrs ..invert the dessert if u want to .
Drizzle with ginger syrup and garnish with candied lime .
Coooking the mixture…cream, coconut milk and sugar along withthe vanilla bean .
Gelatin mixed with cold water
Glass container oiled and ready
Kept in freezer to set.
Recipe for the candied lime …
Cut thin circles of a lime , remove seeds.
Add 3-4 tbsp of sugar …add more if u want , in 1/2 cup of water. Add the cut lime circles.
Cook till they become transparent and the syrup is thickened .
Ready ….i added few drops of yelllow food color to the syrup
